Ndubs, the second label of Ntsiki Biyela, South Africa's first Black woman winemaker. Orchard fruit and quince over a firm acid spine that cuts chile and coconut alike.

80% Syrah, 20% Tempranillo from Morocco's Atlantic coast. Black pepper, olive, and dried herbs — the same aromatic family as ras el hanout.
Pinotage 16 / 70 (South Africa)
Ndubs, South Africa. The country's own grape: black plum and cherry with a dry, peppery finish — built for braises and charcoal.
Cabernet Sauvignon 65 (Zimbabwe)
Kumusha (“home” in Shona), South Africa, from Zimbabwean-born Tinashe Nyamudoka. Red berry, plum and spice — made for juicy red meat.

La Ferme Rouge, Morocco. Pale, dry, nervy — red berry and citrus pith with real grip. Cinsault rosé handles heat better than almost anything here.

So Far Out “Flood Light Snow” 65
Pét-nat from Santa Barbara — ancestral method, bottled while still fermenting, so the bubbles come from the wine itself. Lightly cloudy, dry, faintly cidery.

Orange-blossom honey — semi-sweet, citrus- lifted, smoother than the Axum. Served chilled.
Axum Tej 18 / 80 (Ethiopia)
Ethiopian wildflower-honey wine. Off-dry, bold and floral with an earthy undertone. Chilled.
